If you want to add or remove someone from an Info Exchange Transfer, it can be done easily in the Info Exchange Activity Center. In the Info Exchange Activity Center, select the Outbox from the filter at the top, then select the appropriate transfer and in the Tasks select Modify Info Exchange settings/Add or remove recipients. Finally, Select Add recipients at the bottom or if you are removing someone just delete their name from the list.
